One of the more numerous of the rare breeds, the Old Spot provides fine-grained well marbled meat which has the perfect covering of fat (which aids for superb crackling) resulting in succulent pork joints, flavoursome bacon, hams and sausages.
Gloucester Old Spot pork appears regularly in Raymond Blanc’s dishes and Fergus Henderson’s celebrated St John restaurant in Clerkenwell, London.
This pork has a perfect and a succulence that is second to none. The flavour is outstanding – deep, rich and savory.
Quality
In raw state, our pork meat isn’t white or grey but a pleasing pink and firm to touch. Closer to the bone the meat becomes darker – a distinctive pinky brown.
This slow maturing meat is much more inclined to show marbling and they tend to put on a copious outer layer of fat – producing tastier pork which is quite unlike hybrid factory farmed pork which has a “lean” label.
