Flavour
Our Lleyn and Wiltshire lamb is reared on our rich pastures of the making it wonderfully succulent and sweet. Lamb is perfect for traditional dishes like Sunday roasts, casseroles, and Welsh cawl as well as the international flavours of curries, burgers and kebabs.
Quality
Our slow natural rearing process produces tender tasty lamb with deep coloured cuts, which gives it a distinctive, full flavour.
Recognising good-quality lamb is as important as choosing the right cut. Our Lleyn and Wiltshire lambs have just the right amount of firm, creamy-white fat to ensure that when it cooks, it bastes naturally to ensure a melt in the mouth, succulent tasting meat.
Hanging
Hanging is the process of ageing or maturing the meat by hanging it in a cold room. Lamb is hung for up to seven days to help it lose moisture which means there is less water to come out during cooking which gives a better flavour and texture.
